ぼてぼて茶は出雲地方に昔から伝わる独特の番茶のお茶漬けのようなものです。白い泡を立たせるために乾燥させた茶花を入れて煮だすのが特徴です。
昔は「たたら(玉鋼を作る製鉄)」の労働食であり、一般家庭でも小腹が空いたときに軽食として食べられていました。珍しさから今再び注目されるようになりました。
